Rendang curry paste is a ready-to-use spice mixture in pasta form including onions, ginger, tamarind, turmeric, fennel, cumin, chilli, garlic, lemongrass, shallots, laos and kaffir lime peel. Rendang is originally a Minangkabau dish, which is now served everywhere in Indonesia and in Malaysia. Rendang is usually served in ceremonial meetings such as weddings in honor of the guests. The dish is also popular in Singapore and is also used there on festive occasions. Rendang outside Indonesia is often described as a curry.
Rendang is most commonly used in beef dishes. The meat is stewed together with a return spice mix. There are 2 types of rendang to distinguish: wet or dry rendang. In West Sumatra, wet rendang is served with white rice. Wet rendang is meant that the stewed meat is served with gravy. Dry rendang is the traditional Minangkabau rendang. This rendang is completely dry cooked and is baked with constant shoving until the meat almost turns color. The dry rendang is most often served with glutinous rice.
