Chinkiang vinegar or black rice vinegar is made from water, glutinous rice, wheat bran, sugar and salt.The vinegar is very dark (black) in color and aromatic in taste.It originates from the town of Chinkiang near Shanghai in China.
Black rice vinegar can be used with stir-fry as well as simmer dishes.In combination with some soy sauce in the dish, the taste sour, sweet and salt is balanced.As a dipping sauce, black vinegar gives an intense taste to the dish.To make dipping sauce add brown sugar and finely chopped garlic.
