Preserved Japanese radish or takuan is potted rettich or daikon.The long white rettich are traditionally first hung in the sun for a few weeks until they are soft and flexible.Afterwards they are put in jars for months with a mixture of salt, rice bran, vinegar sugar and herbs.The texture of the rettich becomes soft and at the same time crisp and the taste is slightly salty, sweet and nutty.
Preserved Japanese radish is served as a side dish.It is also used as a filling for Japanese sushi or Korean gimbap.
