Petis udang is a black shrimp paste that has syrupy texture.It is made from shrimp, salt, sugar, water and flour.The shrimps are finely ground and mixed with salt, sugar and flour, after which it is fermented into a paste.In terms of taste, consistency and use is different than the known trassi.
Petis udang is used for, among other things, Penang laksa (slightly sour fish soup with noodles) and Rujak (Malaysian and Indonesian salads in which, among vegetables, fruit is processed).Petis udang is often combined with koentjie (root weed).
