Pickled radish halfed in sweetened brine or takuan is potted rettich or daikon.The long white rettich are traditionally first hung in the sun for a few weeks until they are soft and flexible.After that they are put in jars for months with a mixture of salt, vinegar, sugar and spices.The texture of the rettich becomes soft and at the same time crisp and the taste is slightly salty, sweet and nutty.
Pickled radish is served as a side dish.It is also used as a filling for Japanese sushi or Korean gimbap.
