Jianshui Wenzhou noodles or Wenzhou alkaline noodles are made from wheat flour, salt and water.Originally they used the water from a salt lake in Inner Mongolia "Kansui" to make noodles.The water naturally contained sodium carbonate, potassium carbonate, making it perfect for preparing noodles.The noodles become yellowish in color and more resilient in bite.
You can prepare these versatile Jianshui Wenzhou noodles as noodle soup, stir-fry noodles or as noodles in the hot pot.Jianshui Wenzhou noodle is also used for cold noodle dishes.
